The Don Maximo Process.
1-The Agave Behind the Craft
Crafted from carefully selected Blue Weber agaves, matured for 7 years and grown in our own fields in Jalisco, Mexico.

2-Traditional Cooking
The agave is slowly cooked in traditional masonry ovens, preserving its natural essence and depth of character.

3-Volcanic Stone Tahona
The agave is gently crushed using a traditional volcanic stone TAHONA, delicately extracting the true essence of the agave.

4-Precision in Fermentation
Fermentation takes place in 20,000-liter stainless steel tanks, allowing the agave's natural character to develop with precision and consistency.

5-Distilled with Precision
Distillation takes place in stainless steel stills with copper interiors, ensuring exceptional purity while preserving the agave's authentic character.

6-The Art of Aging
Aged in American white oak barrels previously used to mature whiskey, imparting subtle notes of vanilla, caramel, oak, and spice. This unique aging process creates a distinctive, rich, and beautifully balanced profile.
